I have a confession: I have never fully followed a recipe in my life. I like to wing things—little pinches here, little dabs there. Call it my creativity or rebellious nature but here I am, a true improv-cooker. So this is not a real recipe but the beginning of a dream of mine, which is to create the uncooked cookbook: the art of creating delicious food without ever having to cook. Snack Recipe #1: CAULIFLOWER CEREAL I started having this as a snack when pregnant and craving lots of weird things, but it has now become a nighttime staple of mine (especially postpartum when the breastfeeding hunger strikes!). It might sound utterly insane to many of you, but I have converted pretty much everyone to whom I have preached it. So as they say: don't knock it till you try it! 1 bag DADA Cauliflower Popcorn 1 cup milk of choice (my ideal would be Elmhurst oat milk) A handful of raisins, or chopped up dried figs, or chocolate chips Snack #2: BROCCOLI CAULIFLOWER SOUP + CAULI CROUTONS Again, not a fan of recipes. Not a fan of having to think about cooking either…or cleaning. So, this is a recipe you just can't mess up! HOW TO MAKE: Fill a huge pot with whatever veggies you have in the fridge (especially those that may be on their last few days). Recently, I used all the stems of my big broccoli stalks and 1 head of cauliflower. Add water to pot, enough to cover the veggies with about half an inch extra. Are you a garlic person? Throw in as many garlic cloves as you feel you are on a 1-10 scale of being a garlic person. I’m personally a big garlic gal, so I usually throw in 6-7 cloves. Dump a ton of salt in. (This is to make my groundbreaking concoction: Sea Water, so salt to taste, but it should be SALTY. If you can't do a ton of salt, I suggest adding some dulse seaweed.) I have never measured these proportions, so I say just go for it! Put it on the stove and leave it on low flame. When I say leave it, I mean LEAVE IT! Don’t touch it, don’t think about it, don’t do anything to it for at least 2 hours. Then take out those deliciously mushy veg and blend it all together with a little olive oil. TA-DADA! You got yourself a creamy bowl of yumminess. NOW ADD DADA CAULI ON TOP! Snack #3: CAULIFLOWER CRUNCH / AVOCADO NORI WRAPS 1 box Chopped Mesclun salad (or lettuce of choice) 1 full ripe avocado (smashed) Dollop of dijon mustard* Sauerkraut (I like Hawthorn Valley's Carrot Ginger, or Cosmic Cultures Kyoto Kraut) 1 bag of DADA Cauliflower Popcorn * Sometimes swap out the mustard for cilantro and lime. Feel free to switch it up to your taste! Go nuts and add Brami lupini beans or Jovial Foods pre-soaked white beans. It's also great with anchovies (if you like that kind of thing). If you feel like getting a little wild chop up some fennel, some red cabbage, cucumber…whatever you got in your fridge is the name of the game here. Chop it all up until its almost a paste! Then spread it into Eden Cove Red packaged Nori Seaweed (or whatever nori wrap you can get your hands on) and add some crunchy cauliflower on top and roll that baby up. Happy chomping!
